Zucchini Bake is always one of our favorite breakfasts, snack, appetizer or quick fixes for dinner during the growing season.

Ingredients Method

Ingredients
  

  • 3 cups thinly sliced unpard zuccini
  • 1/2 cup finely chopped onion
  • 1 cup bisquick
  • 1/2 cup Parmesan cheese
  • 1 tblsp parsley
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 clove garlic, chopped
  • 1/2 cup vegetable oil
  • 4 slightly beaten eggs

Method
 

  1. Heat oven to 375 degrees.
  2. Grease 13 x 9 x 2 pan.
  3. In a large bowl, mix all ingredients together & spread in prepared pan.
  4. Bake about 30 to 40 minutes or until golden brown.
  5. Serve warm or cold.
