
Zucchini Bake
Zucchini Bake is always one of our favorite breakfasts, snack, appetizer or quick fixes for dinner during the growing season.
Ingredients
- 3 cups thinly sliced unpard zuccini
- 1/2 cup finely chopped onion
- 1 cup bisquick
- 1/2 cup Parmesan cheese
- 1 tblsp parsley
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 clove garlic, chopped
- 1/2 cup vegetable oil
- 4 slightly beaten eggs
Instructions
- Heat oven to 375 degrees.
- Grease 13 x 9 x 2 pan.
- In a large bowl, mix all ingredients together & spread in prepared pan.
- Bake about 30 to 40 minutes or until golden brown.
- Serve warm or cold.
