Cake Batter
  • 4 eggs
  • 1 2/3 cups sugar
  • 1 cup oil
  • 16 oz can pumpkin or 2 cups cooked & mashed pumpkin
  • 2 cups flour
  • 4 oz. GHA Pumpkin Butter
  • 2 tsps baking powder
  • 1 tsp baking soda
  • 2 tsps cinnamon
  • 1 tsp salt
Frosting
  • 1/2 cup butter
  • 8 oz cream cheese
  • 1 tsp butter
  • 2 cups confectioners' sugar

Method
 

  1. Combine eggs, sugar, oil & pumpkin in mixer bowl
  2. Beat until smooth
  3. Mix flour, baking powder, baking soda cinnamon & salt in a bowl
  4. Combine flour & pumpkin mixture & mix well
  5. Spread in ungreased 15 x 11 X 1 inch baking pan
  6. Bake at 350 degrees for 25 to 30 minutes or until golden brown
  7. Cool on wire rack
Frosting
  1. Beat butter & cream cheese until light
  2. Add vanilla & confectioners' sugar mixing well after each addition
  3. Spread over baked cake
