Pork Chops & Scallop Potatoes

This is a delicious main course that everyone will surely love and be back for more! The chops will come out moist and tender with the potatoes so very tasty!

  • 3 tbsp butter
  • 3 tbsp flour or cornstarch
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp french mustard powder
  • 1 tsp truffle; parmesan cheese & black garlic powder
  • 1 tsp garlic powder
  • 1 14-1/2 oz chicken broth
  • 4-6 (3/4 inch thick) pork rib or loin chops
  • 2 tbsp canola oil
  • additional salt & pepper to taste
  • 6 cups thinly sliced peeled potaotes
  • 1 med onion
  • paprika & parsley to taste, optional

Method
 

Directions
  1. In small saucepan, melt butter; stir in flour or cornstarch, salt & pepper until smooth
  2. Add broth & bring to a boil; Cook & stir for 1 minute or until thickened. Remove from the heat & set aside
  3. In a large skillet, brown the pork chops on both sides in oil: sprinkle with additional salt & pepper if desired
  4. In a greased 13 X 9-in baking dish, layer potatoes & onion
  5. Pour broth mixture over layers
  6. Place pork chops on top
  7. Cover & bake at 350 degrees for 1 1/2 hours; uncover & bake for 30 minutes longer or until meat & potatoes are tender
  8. Top with sweet paprika and parsley to make this dish look so amazing!
