
Pecan Cookies
This is a tasty treat for breakfast, snacks or desserts. Try topping with powdered sugar to make it more attractive and to add to the already tasty, nutty flavor. Not overly sweet….just perfect,….somewhat crunchy texture with a great bite.

Method
Cookie Batter:
- In a large mixing bowl, cream butter & cream cheese until smooth
- Beat in vanilla
- Combine flour & salt; gradually add to creamed mixture
- Divide into 3 equal portions
- Wrap each in plastic wrap; refrigerate for 2 hours or until easy to handle
Preparing Dough:
- On a lightly floured service, roll each portion into a 16-in. x 9-in. rectangle
- Combine pecans & sugar; sprinkle over dough to within 1/2 in. of edges
- Use your rolling pin to slightly press pecan mixture into the dough
- Roll up each rectangle tightly jelly-roll style, starting with a long side
- Wrap in plastic wrap; refrigerate for 2 hours
Slicing dough:
- Unwrap & cut dough into 3/8-in. slices
- Place 2-in. apart on a lightly grease baking sheets or use parchment paper for easy removal of cookies
Bake:
- Bake at 400 degrees for 12 to 15 minutes or until lightly browned
- Remove to wire racks to cool
- Either have them plain or sprinkle with confectioners sugar
