Oatmeal Streusel Cake

“Oatmeal Cake” is a tasty moist treat that is great for breakfast, desert or snack. You’ll love it with your coffee in the morning or as a tasty desert when entertaining friends and family to top off a delicious meal for dessert. We often keep it on hand for a tasty snack during the day. Everyone will love it, no matter what the time of day.

Ingredients
  

Cake Batter

  • 1 1/2 cups hot milk
  • 1 cup original oatmeal
  • 1 1/3 cups All Purpose Flour
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup Butter room temperature
  • 1 cup brown sugar
  • 1 cup sugar granulated
  • 2 large egss
  • 1 tsp. vanilla

Struesel Topping

  • 1/2 cup Butter
  • 1 cup brown sugar
  • 1 Tbsp. Milk
  • 1 cup coconut flakes
  • 1/2 cup pecans finely copped

Instructions
 

Cake Batter

  • Preheat oven to 350 degrees.
  • Coat 9x13 cooking dish with nonstick cooking spray.
  • Combine hot milk and oatmeal and allow to soak while preparing remaining ingredients.
  • In a medium bowl combine flour, cinnamon, baking soda and salt.
  • In a mixing bowl cream together butter and both sugars. Beat in eggs and vanilla. Add half of flour and mix. Add soaked oatmeal including any liquid that did not entirely soak in. Add remaining flour and mix thoroughly.
  • Pour cake batter into prepared baking dish and bake until set, 35 - 40 minutes.

Streusel Topping

  • Combine butter, brown sugar and milk in a sauce pan and bring to boil while stirring continually. Bring to boil until sugar is completely dissolved and remove from heat. Stir in coconut and pecans. (Mixture will be thick.)Spread evenly over entire cake surface. Let stand for about 10 minutes.
  • Best served slightly warm or at room temperature.
