Chocolate Cheesecake Cupcakes

Ingredients
  

Filling

  • 2 3 oz packages of cream cheese
  • 1/4 cup sugar
  • 1 egg
  • 1/8 tsp salt
  • 6 oz semi-sweet chocolate chips

Cake

  • 1/2 cup semi-sweet chocolate chips melted
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 1 cup water
  • confectioners' sugar

Instructions
 

Filling

  • In medium bowl, combine cream cheese, sugar, egg & salt
  • Beat until creamy
  • Stir in 1/2 cups semi-sweet chocolate chips
  • Set aside

Cake

  • Preheat oven to 350 degrees
  • Melt over hot (not boiling) water, choclate chips. Stir until smooth
  • Remove from heat, set aside
  • In large bowl, conbine sugar, vegetable oil, egg & vanilla
  • Beat well
  • Stir in melted chocolate chips
  • Alternate flour, baking soda & salt with water
  • Spoon 1/2 of the cake batter into 16 paper lined cupcake pans
  • Spoon 1 slightly rounded tablespoon of the Filling mixture over cake batter
  • Spoon the remaing cake batter over the Filling
  • Bake at 350 degrees for 23-25 minutes
  • Cool 5 minutes: Remove from pans
  • Sprinkle with confectioners' sugar

Ingredients
  

  • 3 cups coconut
  • 2/3 cup sweetened condensed milk
  • 1 tsp vanilla

Instructions
 

  • Mix all ingredients in a bowl
  • Heat oven to 350 degrees
  • Grease cookie sheets
  • Use two spoons to pack coconut mixture into a ball
  • Drop the coconut balls unto prepared cookie sheet
  • Bake for about 15 minutes or until golden brown in color
  • Let cool on cookie sheet
  • Remove from cookie sheet
  • If desired, dip bottom of cookies into melted chocolate

  • 1 1/2 oz unsweetened chocolate
  • 1/2 cup water
  • 2/3 cup sugar
  • 1/4 cup butter
  • 1 1/2 tsp vanilla

Cake Batter:

  • 1 cup flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup shortening
  • 1/2 cup milk
  • 1/2 tsp vanilla
  • 1 egg
  • 1/2 cup finely chopped walnuts

Your favorite pie crusts

    Instructions
     

    • Sauce: melt 1 1/2 oz unsweetened chocolate with 1/2 cup water
    • Add 2/3 cup sugar
    • Bring to a boil, stirring constantly
    • Remove from heat: stir in 1/4 cup butter & 1 1/2 tsp vanilla
    • Set Aside
    • Cake Batter: stir together 1 cup flour, 3/4 cup sugar, 1 tsp baking powder, 1/2 tsp salt
    • Add 1/4 cup shortening, 1/2 cup milk & 1/2 tsp vanilla
    • Beat 2 minutes medium speed on mixer
    • Scrape sides & bottom of bowl constantly
    • Add 1 egg
    • Beat 2 minutes more scrapping bowl
    • Pour cake batter into pie shell
    • Stir sauce & pour carefully over cake batter
    • Sprinkle top with 1/2 finely chopped walnuts
    • Bake 55 to 60 minutes or until toothpick stuck in center comes out clean
    • Serve warm, if desired

    Wet Bottom Shoofly Pie

    A traditional favorite here in Pennsylvania. Great for breakfast and/or dessert.

    Ingredients
      

    • 1 egg
    • 1 cup molasses
    • 1 cup hot water
    • 1 tsp baking soda

    Crumbs:

    • 1 cup flour
    • 1 cup brown sugar
    • 2 tblsps melted butter

    Your favorite pie crust recipe

      Instructions
       

      • Beat egg, & add molasses
      • Dissolve baking soda in hot tap water & add to egg & molasses
      • Mix with hands the crumbs: flour, brown sugar & melted butter
      • Save half cup of crumbs to sprinkle on top of pie
      • Put remaining crumbs mixture into the gooey mixture & beat
      • Place the prepared pie crust in a 9 inch pie pan
      • Fill the pie pan with the gooey molasses batter
      • Top with the remaining 1/2 cup of crumbs
      • Bake in 350 degrees oven for 45 minutes or until done

      Crapes with Blueberry Sauce Topping

      Crapes are in essence an ultra-thin rich pancake. I this case we top it off with a homemade thick blueberry sauce. Totally amazing for breakfast or brunch. Enjoy it with your tea or coffee as an after-dinner desert.

      • 1 Shallow batter pan

      Ingredients
        

      • 1/3 tsp salt
      • 3 eggs
      • 1 1/2 cups milk
      • 1 1/2 cups flour
      • 2 tbsps vegetable oil

      Blueberry Sauce Topping

      • 1 1/2 cups blueberries
      • 1 cup water
      • 1/2 cup sugar
      • 1 1/2 tbsps cornstarch dissolved in 3 tbsps water
      • 1/2 tsp vanilla

      Instructions
       

      • Put all ingredients into a blender container in order listed
      • Cover & process at Blend until smooth
      • Or combine all ingredients in a mixer bowl & beat until smooth
      • Pour into dish
      • Dip preheated Creperie into batter
      • Turn upright
      • When crepe loses gloss, invert Creperie to remove crepe (You can flip the crepe with a knife to brown other side)
      • Repeat until all batter is used

      Blueberry Sauce Topping

      • Place 1 1/2 cups blueberries in a small saucepan. Cover with water and add sugar & vanilla
      • Heat over medium-high heat until mixtures comes to a low boil & blueberries just start to break apart
      • Add dissolved cornstarch to saucepan & bring mixture to a rolling boil
      • Turn heat down & simmer on low heat for 2 – 3 minutes or until sauce reaches desired consistency. (break apart blueberries with spoon while simmering)
      • Add water, one tablespoon at a time if sauce gets too thick
      • Remove from heat
      • Serve warm & drizzle over crepes

      Cherry Cream Cheese Bars

      Delicious cream cheese treat that can be served as breakfast, dessert or snack. Very popular as an after-dinner dessert when served with coffee. Best if chilled prior to serving.

      Ingredients
        

      Crust

      • 1 cup walnuts (divided in half)
      • 1 1/4 cups flour
      • 1/2 cup packed brown sugar
      • 1/2 cup butter
      • 1/2 cup flaked coconut

      Filling

      • 1 8 oz. package cream cheese
      • 1/3 cup sugar
      • 1 egg
      • 1 tsp. vanilla
      • 1 can cherry pie filling

      Instructions
       

      • Preheat oven 350 degrees
      • Grease bottom of 13 X 9 X 2 pan
      • Chop 1/2 cup walnuts coarsely for topping
      • Chop remaining 1/2 cup finely
      • For crust: Combine flour & brown sugar
      • Cut in butter until fine crumbs form
      • Add 1/2 cup finely chopped nuts & coconut
      • Mix well
      • Remove 1/2 cup of crust mixture & set aside
      • Press remaining crumbs into pan
      • Bake 350 degree for 15 minutes
      • For Filling: beat cream cheese, sugar, egg & vanilla until smooth
      • Spread over hot baked crust
      • Return to oven & bake for 10 minutes
      • Spread cherry pie filling over cheese layer
      • Combine reserved coarsely chopped nuts & reserved crumbs
      • Sprinkle evenly over cherries
      • Return to oven & bake 15 minutes longer
      • Cool & cut into bars

      Cream Cheese Lincoln Log

      Because of the log cabin our 16th U.S. President spent his youth growing up in, he will forever be associated with logs. It has become traditional in our home to bake a yeast raised bread in the form of a log frosted with a chocolate ganache or frosting of your choosing to serve every Feb. 12th in honor of Abraham Lincoln.

      Ingredients
        

      • 4 to 5 cups flour
      • 3/4 cup sugar
      • 1 1/2 tsp salt
      • 2 pkgs Fleischmann's Active Dry Yeast
      • 1/2 cup milk
      • 1/2 cup water
      • 1/4 cup margarine/butter
      • 2 eggs
      • 1 pkg cream cheese
      • 1 egg

      Instructions
       

      • In a large bowl thoroughly mix 1 1/4 cups flour, 1 /2 cup sugar & undissolved Fleischmann's Active Dry Yeast
      • Combine milk, water & margarine/butter in a saucepan. Heat over low heat until liquids are warm. (Margarine/butter does not need to melt)
      • Gradually add to dry ingredients & beat 2 minutes at medium speed
      • Add eggs & 1/2 cup flour or enough flour to make a thick batter
      • Stir in enough additional flour to make a soft dough
      • Turn out onto a lightly floured board: knead until smooth & elastic about 8 to 10 minutes
      • Place in a greased bowl, turning grease side to top
      • Cover & let rise in a warm place until doubled for about 1 hour
      • Meanwhile, prepare filling. Cream the cheese with 1/4 cup sugar until light & fluffy. Blend in egg
      • Punch dough down; turn out onto lightly floured board
      • Divide dough in half
      • Roll 1/2 the dough into a 10 X 14-inch rectangle
      • Spread with half the cheese filling
      • Roll up, as for jelly roll, to form 14-inch roll. Seal edges
      • Place on greased baking sheet
      • Cut slits 3/4 through log at 1-inch intervals
      • Repeat with remaining dough & filling
      • Cover and let rise in a warm place until doubled in bulk, about 1 hour
      • Bake in oven (350 degrees) about 25 to 30 minutes, or until done
      • Remove froim bakign sheets & cool
      • Frost with your favorite chocolate frosting of your choosing

      Oatmeal Carmelitas

      This recipe for caramel oatmeal bars is a tasty quick fix for either breakfast, desert or snacks. Great idea as an after dinner treat with coffee or tea when entertaining guests

      Ingredients
        

      • 14 oz. caramel
      • 1/2 cup evaporated milk
      • 2 cups flour all purpose
      • 2 cups quick cooking oats
      • 1 1/2 cups packed brown sugar
      • 1 tsp. baking soda
      • 1/2 tsp. salt
      • 1 cup butter melted
      • 1 cup semi-sweet chocolate
      • 1 cup chopped pecans

      Instructions
       

      • Combine flour, oats, brown sugar, baking soda, salt and melted butter in mixing bowl and proceed to mix.
      • Press half of crumbs into the bottom of a greased 13×9 pan and bake for 10 mins. @ 350*F
      • Remove from oven and sprinkle one cup semi-sweet chocolate and one cup of chopped pecans
      • Spread evenly with melted caramel
      • Top with remaining crumb mixture and place in pre-heated oven @ 350*F for approx. 20 mins.

      Ingredients
        

      Bars

      • 1 cup packed brown sugar
      • 1 cup vegatable oil
      • 2 eggs
      • 2 cups quick-cooking oats
      • 1 1/2 cups flour
      • 1 cup raisins or cut up dates
      • 1 cup coconut or chopped nuts
      • 1 1/2 tsp cinnamon
      • 1 1/2 tsp cloves
      • 1 tsp baking soda

      Honey Glaze

      • 1/3 cup honey
      • 2 tblsp Butter

      Instructions
       

      • Heat oven to 350 degree & grease jelly roll pan, 15 1/2 x 10 1/2 x 1 inch.
      • Mix brown sugar, oil & eggs in a large bowl until smooth.
      • Stir in remaining ingredients except the Honey Glaze.
      • Spread in pan evenly with a spatula.
      • Bake just until center is set but not firm for about 17 to 22 minutes.
      • Heat Honey Glaze while bars are baking in a small saucepan over medium heat stirring constantly until heated through.
      • After bars are bake, remove from oven & drizzle with Honey Glaze.
      • Cool completely or enjoy eating them warm.
      • Bars also can be place in the freezer, but they’ll likely be gone long before you get the chance!

      Banana Nut Cream Cheese Muffins

      • 2 cups flour
      • 1 tsp baking soda
      • 1 tsp baking powder

      • 4 medium over-ripe bananas, mashed
      • 1/2 cup sugar
      • 1/2 cup packed brown sugar
      • 1 large egg
      • 1/4 cup vegatable oil
      • 2 tsps vanilla
      • 1/2 cup chopped pecans

      Cream Cheese Swirl

      • 8 oz softened cream cheese
      • 1/4 cup sugar
      • 1 large egg yolk
      • 2 tsps vanilla
      • 1 tbsp milk, if needed

      Instructions
       

      • Preheat oven to 350 degrees.
      • Line muffin pan with liners.
      • In large bowl, mix together banana's, sugar & brown sugar.
      • Beat in egg, vegetable oil & vanilla.
      • Slowly add flour, baking soda, baking powder & salt.
      • Mix until no lumps remain & fold in pecans.
      • In medium bowl, beat cream cheese, sugar, egg yolk & vanilla until well blended. (if cream chees is too thick, beat in milk to thin it out if needed)
      • Fill prepared muffin tins 3/4 full of batter.
      • Top each muffin with about 1 tablespoon of cream cheese mixture.
      • Use a toothpick to swirl cream cheese in the batter.
      • Bake muffins for 16-18 minutes or until a toothpick inserted in the center comes out clean.
      • Serve fresh. Store leftovers in the fridge.
