English Muffin Bread

This delicious recipe is great when toasted topped with butter and jelly or jam of your choosing. Try making grilled cheese sandwiches using our Roasted Garlic Ghee Butter…..truly special!!

  • 5 cups all-purpose flour
  • 2 pkgs active dry yeast
  • 1 tbsp sugar
  • 2 teas salt
  • 1/4 teas baking soda
  • 2 cups warm milk (120 to 130 degrees)
  • 1/2 cup warm water (120 to 130 degrees)
  • 2-3 teas cornmeal for coating pans & top of bread

Method
 

Directions:
  1. In a large bowl, combine 2 cups flour, yeast, sugar, salt & baking soda
  2. Add warm milk & water
  3. Beat on low for 30 seconds, scraping bowl occasionally
  4. Beat on high for 3 minutes
  5. Stir in remaining flour (batter will be stiff)
  6. Do not knead
  7. Grease two 8 in. x 4 in. loaf pans with butter
  8. Sprinkle pans with cornmeal
  9. Spoon batter into the pans & sprinkle cornmeal on top
  10. Cover & let rise in a warm place until doubled, about 45 minutes or longer
  11. Bake at 375 degrees for 35 minutes or until golden brown
  12. Remove from pans immediately & cool on wire rack

Pecan Cookies

This is a tasty treat for breakfast, snacks or desserts. Try topping with powdered sugar to make it more attractive and to add to the already tasty, nutty flavor. Not overly sweet….just perfect,….somewhat crunchy texture with a great bite.

  • 2 cups butter, softened
  • 2 8 oz cream cheese, softened
  • 2 tsps vanilla
  • 4 cups flour
  • 1/2 tsp salt
  • 2 1/4 cups finely chopped pecans
  • 1 1/3 cups sugar

Method
 

Cookie Batter:
  1. In a large mixing bowl, cream butter & cream cheese until smooth
  2. Beat in vanilla
  3. Combine flour & salt; gradually add to creamed mixture
  4. Divide into 3 equal portions
  5. Wrap each in plastic wrap; refrigerate for 2 hours or until easy to handle
Preparing Dough:
  1. On a lightly floured service, roll each portion into a 16-in. x 9-in. rectangle
  2. Combine pecans & sugar; sprinkle over dough to within 1/2 in. of edges
  3. Use your rolling pin to slightly press pecan mixture into the dough
  4. Roll up each rectangle tightly jelly-roll style, starting with a long side
  5. Wrap in plastic wrap; refrigerate for 2 hours
Slicing dough:
  1. Unwrap & cut dough into 3/8-in. slices
  2. Place 2-in. apart on a lightly grease baking sheets or use parchment paper for easy removal of cookies
Bake:
  1. Bake at 400 degrees for 12 to 15 minutes or until lightly browned
  2. Remove to wire racks to cool
  3. Either have them plain or sprinkle with confectioners sugar

Cinnamon Roll Braided Bread

Perhaps better than any cinnamon roll you would ever eat!!

Ingredients
  

Dough:
  • cups warm water
  • tsp. dry active yeast
  • 2 tbsp. sugar
  • cups flour
  • 1 tsp. salt
  • 2 tsp. cinnamon for dusting
Filling:
  • 1 cup brown sugar
  • 1 tbsp. cinnamon
  • 6 tbsp. soft butter
Glaze:
  • 1 cup powdered sugar
  • 1-2 tbsp. heavy cream or milk
  • 1 tsp. vanilla
  • 2-3 tsp. cream cheese (optional)

Method
 

Dough Mixture:
  1. In a large mixing bowl or a bowl of a stand mixer, add 1 ½ cups of warm water, 2¼ tsp. yeast & 2 tbsp. sugar.
  2. Gently mix & allow it to stand until it becomes foamy/bubbly, about 5 minutes.
  3. Add 3½ cups flour & 1 tsp. salt, mixing until combined with a mixing spoon or dough hook.
  4. Continue to knead with the dough hook or by hand on a clean, floured surface for 5 minutes. (you might need to add more flour to handle dough)
  5. Cover dough with a dish towel & let rest for at least 10 minutes on a countertop.
Filling:
  1. Sprinkle 2 tsp. of cinnamon over the top of dough.
  2. Using a rolling pin, roll dough out into a wide, thin rectangle.
  3. Combine filling ingredients of 6 tbsp. softened butter, 1 cup brown sugar & 1 tbsp. cinnamon.
  4. Spread filling using a pastry brush or flat blade knife evenly across dough, reaching corners.
Braiding bread:
  1. Roll lengthwise as you would a cinnamon roll & fold log in half, pressing the seams of the dough together.
  2. Using a knife or pastry cutter, cut two seems into the dough, leaving 1 inch connected at the top, so that you are left with 3 dough strands to braid.
  3. Overlap pieces into a braid & pinch seam at end to seal pieces together. Place dough on parchment paper.
  4. Cover with a towel & let rise once more for 30 minutes.
Bake:
  1. Bake at 375℉ for 20 to 25 minutes or until golden brown.
  2. While baking your cinnamon roll, make your glaze. Adding more powdered sugar or milk as needed for desired consistency. (optional add cream cheese)
  3. Allow to cool for a least 10 minutes before drizzling glaze. (you can wait until completely cooled before applying glaze)

Orange Creamsicle Salad

Another idea is to use your leftovers by placing in a popsicle mold or plastic container and place in the freezer. Scoop it out like ice cream once it freezes. It is delicious either way! This stuff is really good!

  • 3 oz orange-flavored gelatin
  • 1 cup boiling (juice of mandarin oranges)
  • 1/2 cup cold water
  • 3.4 oz vanilla instant pudding
  • 8 oz whipped topping thawed
  • 3 15 oz cans of mandarin oranges (drained)
  • 2 cups mini marshmallows
  • 1/4 cup mini marshmallows (optional)

Method
 

Instructions:
  1. Use a large heat-safe bowl, stir together the orange gelatin & boiling juice of the mandarin oranges
  2. Stir until the gelatin is completely dissolved
  3. Stir in cold water & place in the refrigerator for 15 min
  4. Removed the cooled gelatin from the refrigerator & whisk in the instant pudding until completely incorporated
  5. Cover the bowl & return to the refrigerator for 20 min
  6. Remove the bow from the refrigerator.
  7. Fold in the whipped topping, the drained mandarin oranges & the mini marshmallows
  8. Return to the refrigerator & chill for 2 hours or overnight
  9. Just before serving, you can garnish with some mandarin oranges & mini marshmallows

  • 1 cup (8 oz.) cream cheese at room temperature
  • 1 cup (2 sticks) butter at room temperature,

Directions:
  1. To prepare dough, beat cream cheese & butter together until smooth & fluffy
  2. Gradually add half the flour, until blended then add remaining flour
  3. Scrape dough onto lightly floured work service & divide into thirds
  4. Shape each portion into a disk & wrap in plastic wrap
  5. Refrigerate dough overnight
  6. Preheat oven to 350 degrees
  7. Line 2 large baking sheets with parchment paper
  8. To prepare filling, combine sugar, cinnamon & walnuts
  9. Roll one portion of dough on lightly floured surface to a 12-inch circle
  10. Brush with 1/3 of melted butter & sprinkle with 1/3 of the walnut mixture
  11. Cover dough with wax paper & press filling into dough
  12. Remove wax paper & cut into 12 wedges
  13. Roll each wedge from it wide side edge & set rolls point side down on baking sheet, 1 inch apart
  14. Repeat with remaining dough, butter & filling
  15. Brush rolls lightly with egg yolk mixture
  16. Bake for 30 minutes or until pastries are golden brown

  3. In small saucepan, heat milk over medium-high heat 3 minutes (temp should not be above 110 degrees)
  4. Whisk in yeast & 1 tbsp sugar; let stand for 5 minutes
  5. In stand mixer, whisk flour, cinnamon, salt & sugar
  6. Attach dough hook to mixer; add vanilla, eggs butter & yeast mixture
  7. Knead dough 3 minutes or until soft & dough come together
  8. Add raisins; knead dough 1 minute or until incorporated
  9. On lightly floured work surface, knead dough 1 minute or until smooth & elastic
  10. Form a ball & place in prepared bowl
  11. Cover with plastic wrap & let stand in warm place for about 1 hour or until dough has almost doubled in size
  12. On lightly floured surface, punch down dough; divide dough into 12 equal pieces
  13. Roll each piece into a ball & place in prepared dish; cover with plascit wrap & let stand for 30 minutes
  14. Preheat oven to 350 degrees; remove plastic wrap & bake 45 minutes or until golden brown
  15. In medium bowl; stir in cream cheese & confectionary sugar
  16. Transfer cream cheese into small zip-top plastic bag. Snip bottom corner of bag
  17. When buns are cool, pipe cream cheese mixture over buns to create a cross

Chocolate Coating
  1. Melt chocolate over a double boiler until smooth & creamy

  1. Preheat oven to 375 degrees for packets or 350 degrees for one pan
  2. In medium bowl whisk garlic, vinegar, oregano, salt, pepper, ground mustard, thyme & sugar; slowly drizzle in oil whisking constantly
  3. Stir in onion & tomatoes
  4. Tear four 12 X 24-inch sheets aluminum foil
  5. In center of each sheet, evenly divide half of the tomato mixture
  6. Place 1 chicken breast over the tomato mixture & evenly top each chicken with remaining tomato mixture
  7. For each packet, tightly crimp top & bottom sides of foil over chicken; fold & tightly crimp both ends of foil
  8. Place packets on rimmed baking pan; bake about 45 minutes or until internal temperature of chicken reaches 160 degrees
  9. Carefully open top of packets; evenly sprinkle with croutons & cheese
  10. Reseal packets; let stand 3 minutes or until cheese melts. (internal temperature of chicken will rise to 165 degrees)
  11. Open packets; evenly sprinkle with basil (optional chives & parsley)
We did not make it into 4 packets. We thinly sliced the chicken breast into 4 to 5 cutlets per chicken breast. We lined a 7 1/2 X 12 pan with foil then place foil on the top of the pan. Follow the same instructions as if using individual portions for cooking the chicken.

    Pork Chops & Scallop Potatoes

    Directions
    1. In small saucepan, melt butter; stir in flour or cornstarch, salt & pepper until smooth
    2. Add broth & bring to a boil; Cook & stir for 1 minute or until thickened. Remove from the heat & set aside
    3. In a large skillet, brown the pork chops on both sides in oil: sprinkle with additional salt & pepper if desired
    4. In a greased 13 X 9-in baking dish, layer potatoes & onion
    5. Pour broth mixture over layers
    6. Place pork chops on top
    7. Cover & bake at 350 degrees for 1 1/2 hours; uncover & bake for 30 minutes longer or until meat & potatoes are tender
    8. Top with sweet paprika and parsley to make this dish look so amazing!
