
Banana Nut Cream Cheese Muffins
Yummmmm…………moist and delicious. You’ll want to have these around for breakfasts. snacks and deserts!
Ingredients
Muffins
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 4 medium over-ripe bananas, mashed
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1/4 cup vegatable oil
- 2 tsps vanilla
- 1/2 cup chopped pecans
Cream Cheese Swirl
- 8 oz softened cream cheese
- 1/4 cup sugar
- 1 large egg yolk
- 2 tsps vanilla
- 1 tbsp milk, if needed
Instructions
- Preheat oven to 350 degrees.
- Line muffin pan with liners.
- In large bowl, mix together banana's, sugar & brown sugar.
- Beat in egg, vegetable oil & vanilla.
- Slowly add flour, baking soda, baking powder & salt.
- Mix until no lumps remain & fold in pecans.
- In medium bowl, beat cream cheese, sugar, egg yolk & vanilla until well blended. (if cream chees is too thick, beat in milk to thin it out if needed)
- Fill prepared muffin tins 3/4 full of batter.
- Top each muffin with about 1 tablespoon of cream cheese mixture.
- Use a toothpick to swirl cream cheese in the batter.
- Bake muffins for 16-18 minutes or until a toothpick inserted in the center comes out clean.
- Serve fresh. Store leftovers in the fridge.
